We had emphasized this weekend at a retreat the concept that the committing of sin requires the shedding of blood for cleansing/redemption. How do today's Jews find cleansing without sacrifice?

Not only Jews but all other religions must face that question. While I wish everyone were going to be in heaven I have to accept the biblical statement that Christ is the only way to the Father. It was the blood of Christ which satisfied God’s justice.
